Chef Patron of Cornerstone in Hackney Wick and Pearly Queen in Shoreditch, acclaimed Cornish chef Tom Brown began his culinary journey in restaurants across the South West of England. His foundational experience includes time at Rick Stein’s esteemed establishments before forming a pivotal partnership with two-Michelin-starred chef Nathan Outlaw.
A Michelin-Starred Pedigree
Beginning his tenure with Outlaw at the St Enodoc Hotel in Rock, Cornwall, Tom swiftly ascended the ranks to Head Chef. Following three successful years in this role, he relocated to the capital to take the helm at Nathan’s London outpost, Outlaw’s at The Capital, where his precise execution successfully retained the restaurant’s coveted Michelin star.
In 2017, Tom departed to launch his own venture, Cornerstone, which opened to rapturous acclaim the following year. His dedication to simple, seasonal, and produce-driven cooking earned the restaurant a Michelin star in 2021. More recently, he opened Pearly Queen, an oyster bar in Shoreditch that continues to champion outstanding British seafood. For this Four Hands event, his coastal expertise will beautifully complement Chef Atul Kochhar’s exploration of India’s unexplored sister states.
A Celebrated Culinary Profile
In addition to his restaurant success, Tom is a familiar face on British television. He notably reached the finals of BBC Two’s Great British Menu in 2018 after triumphing in the South West heats.
