Grilled Aubergine: Grilled aubergine and masala kale with coconut korma, a unique take on the classic korma with an East Asian flair.

Gangtok Momo: Steamed dumplings of seasonal vegetables, served with tomato and chilli chutney, and fermented pounded vegetables, light in texture but rich in taste.

Kand Mool: Roasted root vegetables in an onion and ginger gravy, offering a comforting and flavorful dish.

Cauliflower Mattar Bhaji: Cauliflower and peas in a San Marzano sauce, providing a mild yet satisfying flavor profile.
