Lillian Luk gave diners a masterclass in sensational Shanghainese cooking on Sunday 25th February, joining Atul Kochhar in the kitchen at Kanishka for his Sunday Supperclub series.
A perfect way to celebrate the Lunar New Year, Lillian Luk’s four-course menu showcased a great selection of lesser0known foods from Shanghai and favourites from her successful Shanghai Supper Club, all executed with a tasteful Indo-Chinese twist.
Dinner began with a selection of Shanghainese cold starters, including Kaofu wheat gluten with dried mushrooms and peanuts, and drunken chicken. Shanghai snacks such as crispy spring rolls and steamed glutinous rice shao mai followed, before the main course of Dong Po style braised pork belly and slow-cooked pork knuckles. To finish, guests were treated to a choice of two exciting desserts, seaweed dusted rice cake or fermented rice wine lees with glutinous rice balls.
Lillian runs Shanghai Supper Club, a pop-up dinner party and occasional takeaway services based in Marylebone, London. The primary focus of the supper club is to share and promote the lesser known and appreciated food from Shanghai where Lillian was from originally.
Her food is an ode to her grandmother’s home cooking as well as the ubiquitous snack foods found on the streets of Shanghai. Lillian has been featured in the NatGeo documentary, Gok’s Chinese Takeaway, Chanel 4’s Sunday Brunch and various other food and art-related projects. Most recently, she participated in a TV cooking competition series which will air on Amazon Prime UK in Q1 2024.
