On Wednesday 6th March, chef Adam Handling joined Atul Kochhar in the kitchen at Kanishka for the second night of the Michelin-starred ‘Four-Hands’ series.
Working alongside Atul to produce a unique bespoke tasting menu, Adam brought his passion for outstanding British food, sustainability and fighting food waste to the table at Kanishka, executed with the level of innovative Modern British cooking that he’s become so well renowned for at his Michelin-starred flagship restaurant, Frog by Adam Handling.
Highlights from the seven-course tasting menu included the likes of burnt seafood samosa with Devon crab meat moilee; a ‘Scottish Waters’ dish with carrot, chilli and scallop shell bread; Bhatti Ka Gosht comprising Chettinad-spiced lamb cannon, watercress and lamb jus; and ‘Food Fight’, Adam’s Great British Menu winning dish, to finish.
